Escabeche
The Spanish word for “pickled”. It usually refers to fresh fish (and sometimes poultry) that is fried, and then picked in vinegar, spices, hot peppers and oil. At Pearl restaurant is carrots, shallots and fennel cooked in saffron, vinegar and coriander seeds.
